Bau's Seafood Paella

Seafood Paella
Serves 4 

1 small yellow onion
1 celery stalk
1 tomato
4 garlic cloves
15 shrimp heads
fish skin
spanish paprika 

1 cup paella rice
1 onion
4 garlic cloves
seafood mixture
4 tomatoes
spanish paprika


For the broth, add olive oil, cook vegetables on a low fire, add shrimp heads and fish skin, (keep the shrimp meat for later, don’t put it in the broth) 5 min, let the juice come out and add the water (2L - 0’5 gallons)

Add salt, Spanish paprika and saffron.
Let it boil for 30 minutes on a low fire. 

Next, sauté onion and =garlic cloves over low fire
Add all of the seafood (clams, mahi-mahi, scallops, swordfish) add salt to taste and let it cook for 5 min.
Add the Spanish paprika and right away add the tomatoes peeled and smashed and cook for 2 minutes don’t let the tomato cook, add the rice and mix everything, 2 min and add the broth.
Make sure everything is mixed evenly together, add more saffron and let the fire do the rest for 35-40min. 

Don’t move or touch the rice until the paella is cooked, let it for 10 minutes.
